Julio Bouchon entered the wine business in the mid-1970s by purchasing an old vineyard and winery in Mingre. The family business consolidated itself in the 2000s. Driven by a curiosity about the Secano dry farming area, Bouchon explored unfashionable varieties in Chile at the time. Bouchon dedicated himself to cultivating and bottling País in two distinct versions. The first is País Salvaje, made from grapes that grow naturally in a forest next to the winery. The second is País Viejo, crafted from grapes sourced from old vines. These wines are a must when it comes to discovering the potential profiles of País. In my opinion, Bouchon is one of the producers worth following in this variety. Over the years, Bouchon added two more vineyards, Santa Rosa (reds) and Batuco (whites), also in Maule. Bouchon is currently exploring more Bordelais varieties in reductive styles, such as Block Series Cabernet Sauvignon and Granito Tinto. The Director is currently Julio Bouchon (son), and the enologist is Christian Sepúlveda.
