Readers will find so much to explore in these new releases from Olivier Collin. The wines are fermented in barrel, which lends a distinctive vinous intensity, and yet, there is real distinction in the various bottlings. Some wines are more overt, others show greater tension, depending on the base vintage and also time on the lees prior to disgorgement. The Collin Champagnes respond quite well to aeration, so I would not be afraid to open them well in advance.
