The low-key Fred Scherrer got his winemaking start while he was in high school, working with grapes from his family vineyard. Following studies at UC Davis he worked his way, eventually, to Dehlinger Winery in 1988, where he was winemaker and continued to make his own wines on the side until moving into his own, suitably understated facility in Forestville in 1997. "I place great value on acidity because I want my wines to have energy and precision and to develop positively with age, not just to last; otherwise there's no point in holding them," he told me. Too much new oak is anathema to Scherrer "because, naturally, it's something that distracts from the fruit, and even with age too many wines still show the influence of the oak, which is of no interest to me."To make the point of his wines' ageworthiness he opened a selection of older bottles, including a 2002 Chardonnay Helfer Vineyard, the 2005 Zinfandel Old & Mature Vines and the 2003 Cabernet Sauvignon Scherrer Vineyard, all of which were in prime condition and in no danger of sliding into infirmity any time soon.
