Christian Seely and head winemaker Pierre Montegut welcomed me to their Pauillac Second Growth in their new facility that was completed last year. “I think it's a wine of pure Cabernet Sauvignon from the plateau that gives it the energy,” Seely opined. “I like the purity of blackcurrant fruit, graphite and its floral character. Maybe there is less roundness than in 2022 - it is a more classic style of Pichon Baron. We took care to have a gentle extraction with less délestage to avoid dry tannins and maintain freshness. Because of the gentle extraction, we have higher quality vin de presse exclusively from the Cabernet, representing 12% of the blend. This has been possible due to the new facilities. We have around 13.2% alcohol. The three days of rain in September decreased the sugar levels, and the later pick was lighter in alcohol.”
