I cannot remember when I began visiting Château du Moulin-a-Vent, but it was quite a few years ago. Once we had tried and failed to enter the front courtyard, which offered just a few millimeters of space on either side of the car, I met with co-proprietor Edouard Parinet. “We started to harvest early in 2020, on August 18th, and continued until the beginning of September,” he told me. “There were varying levels of ripeness because of the frost. The alcohol was 13.5%, and we could see that it could quickly rise to 16%. They are matured for 12 months in varying degrees of oak barrel and stainless steel. The Château and Champ de Coeur are 25% in oak, Verillats 50%, Rochelle 60%, Grands Savarins 40% and Clos 100%. Then after blending, they are aged another six months in stainless steel.” For certain, there is a change in modus operandi at this address in the sense that the wines were once raised in much more wood, sculpting a more Côte d’Or-like Beaujolais. Drawing back from oak is creating a more Gamay style of wine that is arguably less generic and more terroir-driven.
