Haut-Bergey
Enologist Pierre Guillot said this property began using a laser-optic sorting table this year to keep only the best grapes, rather than relying solely on manual sorting. In his view, although the machine is horribly expensive, it allows for greater precision in grape selection, which should translate to even better wines. Guillot also noted that no cabernet franc was included in the blend in 2009.
