Domaine Henri Rebourseau

This Domaine is almost unrecognizable since I began visiting what with the cluster of new buildings. I tasted with Pierre Graffeuille, who I see more often at Château Montrose (which is also owned by Martin and Olivier Bouygues and head winemaker Bastien Giraud).

“The building is 99% finished,” Graffeuille tells me. “The tunnel [connecting the maison and the winery] is currently being renovated and we are also creating an oenotheque cellar to store old bottles. The winery is virtually finished and 2023 was the first vintage vinified in the new cellar. Everything is still mostly destemmed and the idea is to have respectful extraction, mainly pigeage at the beginning of fermentation until 1050. It could be just a couple of piges with some post-fermentation maceration, keeping the temperature warm and deciding each day whether to keep the wine under the cap. In 2019, we changed all the barrels being used by the previous owners and therefore had to use 100% new oak. Now, we can reduce the amount of new oak to around 40% to 45% for the Grand Cru, 35 to 40% on the Premier Cru. We kept some of the previous cooperages, but we wanted to diversify and open the door to new ones. We used 19 cooperages in 2023 that are mainly 350-liter and 450-liter barrels. In the future, we might use clay amphora. We are trying to define the style. It will take some time. We will bottle the Village Premier cru in a month. We started picking on September 11 with the Charmes-Chambertin and finished with La Corvée on September 25 with a couple of days’ break due to rain.”
