Domaine du Pavillon de Chavannes
Beaujolais doesn't get more elegant than at this historic property, whose owner, Paul Jambon, has family ties to the Geoffrays (Château Thivin) and Chanrions (Domaine de la Voute des Crozes), both of whom also produce some of the greatest wines of Beaujolais. Their top bottling, the Cuvée des Ambassades, is sourced from five hectares of Jambon's best and oldest vineyards on Mont Brouilly, which is composed of ancient volcanic rock. Winemaking is hyper-traditional, with whole clusters fermented in large concrete tanks followed by brief aging in large, old wooden casks. The wines, while delicious upon release, are balanced to reward patience.
