The Food:

Saison Reserve Caviar; white sturgeon caviar, warmed by the fire in a packet of giant kelp, served on a bed of spinach poached in seaweed butter

Striped Horse Mackerel; sashimi with a broth of rose and verbena

Local Spot Prawn; cooked live over the fire, a sauce of salted peach and sudachi

Tomato; green tomato ceviche with pickled kombu, sea grapes, and jalapeño; tomatoes with tomato ganache; an embered tomato inside another tomato

Sea Urchin on grilled bread soaked in a sauce of grilled bread

Black Cod; line-caught and cured over kelp, served with a sauce of yogurt and citrus leaves

Mushrooms; almond milk sauce

A broth of grilled mushrooms

Radish; whole radish prepared in various ways

This recent charity dinner at Saison was easily the finest meal I have had there and also one of my best dinners of 2018, period. The evening came together as a charity lot that was auctioned off at the most recent La Festa del Barolo to benefit children’s oncology at The Mount Sinai Hospital.
